The research was carried out by Eduardo Torres Dominguez, who is studying for a Ph.D. in chemical engineering at the MU School of Engineering. The research team includes researchers from the School of Engineering and the MU School of Agriculture, Food and Natural Resources.

"We chose this material, knowing it will have good antibacterial behavior, and we strengthened its mechanical stability to withstand the normal wear and tear in a typical food processing environment," Hunt said. "In addition to normal cleaning procedures, our coating can also add a layer of preventive measures to help prevent the spread of food-borne contamination."

The researchers said that this is the first step required to test the coating's performance in a real environment in the future. Although the team has not proved it against the new coronavirus, Hunt and Mustapha believe that their surface can help prevent the spread of the COVID-19 pandemic in food processing environments because of its durability and disinfection properties. So far, it is effective against a strain of E. coli that may be fatal to humans, and more work is being done to test the effect of the coating on other pathogenic bacteria.
